The food of Sicily
With a history and culture rooted in Greek and Arabic food traditions, the ancient, rugged island of Sicily is lorded as the gastronomic star of Southern, if not all of, Italy. In hot dry climates, wheat is king and Sicily is no exception where stuffed breads, pastries and pasta are staples. Cheese, especially ricotta, is found everywhere and seafood in the form of anchovies and tuna are legendary, often prepared with the famous oil of the region. Expect a colourful amalgam of Byzantine and Saracen food traditions with the simplest, freshest produce available…. and then there’s Cassata!
